Easy Teriyaki Beef Skewers: A Weeknight Winner for Busy Moms

If your evenings are anything like mine (when my hubs travels), you’re probably juggling school work, after-school activities, and endless to-do lists. Finding time to whip up a healthy dinner can feel impossible. Leaving you emotionally distressed you end up driving through the fast food line.

That’s why I’m pumped to share one of my weeknight lifesavers: Teriyaki Beef Skewers. They’re quick, simple, and always a hit with the family!

Imagine this: it’s a busy weeknight, and you need something easy yet tasty. Enter teriyaki beef skewers. Not only are they super easy to make, high in protein, but the kids love them too—there’s something about food on a stick that’s just fun.

One of the things I love most about this recipe is how versatile it is. You can use your favorite veggies or even switch out the beef for chicken or tofu if you prefer. Plus, if you add some pineapple chunks, you get this amazing sweet-savory combo that’s absolutely delicious. And if you are anything like our household then pairing all meals with fruit is a must with the kids.

A little tip to make your evenings less hectic: prep everything ahead of time. Cut up the veggies and marinate the beef the night before. When you get home, all you have to do is assemble and cook the skewers. It’s a lifesaver on those especially crazy nights.

And don’t be afraid to get the kids involved. Let them help assemble the skewers—it’s a fun activity and a great way to get them excited about dinner. Plus, they’re more likely to eat their veggies if they’ve helped make them! wink wink.

Another pro tip: make a double batch and freeze half. You’ll thank yourself on those nights when you’re too tired to cook. Just pull them out of the freezer, and you have a quick, delicious meal ready to go.

Serves 4

4 tbsp. coconut sugar
4 tbsp. tamari sauce
4 tbsp. rice wine vinegar
2 tbsp. vegetable oil
2 garlic cloves garlic, minced
1 tsp. fresh ginger, minced salt & pepper to taste
1 1⁄2 lbs. (680g) top round steak, cut thin
2 green onions, sliced, serve 4 tbsp. cilantro, to serve
1 red chili pepper, thinly sliced, to serve
1 tsp. sesame seeds, to serve

What you need to do

In a large bowl, mix the coconut sugar, tamari sauce, rice wine vinegar, vegetable oil, garlic, ginger, salt and pepper. Add the steak to the bowl, and toss to coat in the marinade. Cover the bowl and place in the refrigerator to marinate for 2 hours.

If using wooden skewers, prepare them by soaking them in water
for 20 minutes.

When ready to cook, preheat the broiler to medium-high. Thread
the marinated beef onto the wooden skewers. Place the assembled skewers under the broiler and grill until the beef is fully cooked, approximately 3 minutes on each side.

Serve the skewers immediately topped with the green onions, cilantro, chili pepper, sesame seeds and any remaining teriyaki sauce.
